Banana Peanut Butter Chocolate Chip Muffins

These are a Lindsey household favorite! These were probably one of the first healthier muffins I experimented with that didn't have any flour added to it. It's quick, simple, and calls for ingredients you likely already have in your pantry. These are easily a breakfast muffin if you like, I would just suggest to replace the chocolate chips with berries.


This being my first blog post, I want to preface by saying a few things. We made the switch to organic food a couple years ago so all of my recipes are used with primarily organic ingredients. I do follow EWG's Dirty Dozen and Clean 15 (https://www.ewg.org/foodnews/) so not everything I use is organic, but most of it is. I will go more into detail in another post about our health journey, but for now I'll just say that health and nutrition is simply the most important factor for me when cooking for my family and I -- so strive to keep all of my recipes as whole food based as possible. I know that isn't always possible when trying to accomplish certain types of recipes but I try my best to find an alternatives to recipes that lack nutritious ingredients.


Let's get to prepping for these muffins! One of the things I like to do when cooking or baking is to clear up my work station first. After that, I like to get out all of the ingredients I know I will need. Preferably as I am cooking, I like to put away things I won't be needing anymore... but that doesn't always happen.


Another tip is having a discard pile somewhere close in your work station. This is helpful to keep cleanup manageable and I'm all for saving time! If you compost, having a small bin near is best. I like to have a bowl or bag ready for the trash I know I'll be throwing away or recycling. If you're in a similar stage of life as me, you're probably cooking with a little on your hip... so seriously, any little time saving tick is in your favor.


That being said, now it's time to get out the ingredients you will need. I also want to say I typically double this recipe (and most recipes for that matter) because we go through all baked goods and food FAST!


Banana Peanut Butter Chocolate Chip Muffins


Ingredients:

2 Bananas

2 Eggs

1 Cup Peanut Butter/Nut Butter of choice

2 TBSP Honey or Maple Syrup (you can opt out of the sweeter if you want, the bananas give it a natural sweetness already)

1-2 tsp Vanilla

1/2 tsp Baking Powder

1 Cup Chocolate Chips (or as many or few as you like)

Coconut Oil for greasing Muffin Tin


Alternative: you can replace chocolate chips with blueberries or nuts.



Instructions:

Preheat oven to 350.

I like to mix the bananas up first to get the consistency the same and then add in the rest of the wet ingredients, baking powder, and chocolate chips. Once you have everything incorporated together, use coconut oil to grease your muffin tins then fill them evenly and bake anywhere from 15-20 minutes depending on your oven. (I recently started to line my muffin tins in silicone baking cups because I find those easier to clean).




Remove from oven and let it cool down and rest for 10 minutes (if you can wait) and then enjoy!
